Talk about sambar recipe and instantly your mind goes to south India. I can’t tell you my six years in South India; I really had a great time with its cuisine, especially sambar my all time favorite, I can’t stop having sambar with idli/dosa especially idli sambar, steamed rice, medu vada, uttapam , etc. it is easy to make and very healthy also, sambar is also kind of soup, hot and spicy lentil soup with mixed vegetable. In South India sambar is known as kuzhambu. You are required lentil, tomato, onion, steamed/boiled vegetables, tamarind and spices where sambar masala powder is the key spice.

Vegetable Sambar Recipe

Ingredients (Required For Sambar Recipe)
- 1/3 Pigeon pea (split toor dal)
- ¼ teaspoon of turmeric powder
- 1 cup of chopped mixed vegetables( like drumsticks, potato, brinjal, French beans, okra, radish and so on)
- ½ teaspoon of mustard seeds
- 7-8 curry leaves
- 1-2 dry red chillies
- Pinch of asafetida
- 1 finely chopped onion
- 1 tablespoon of samber powder
- ½ tablespoon tamarind (seedless)
- 1 finely chopped tomato
- 1 tablespoon of oil
- 2 ½ cups of water (or as per requirement)
- 1 tablespoon of coriander leaves finely chopped
- Salt to taste
PROCESS OF MAKING
#01 Soak tamarind in 3 tablespoon of hot water for 15-16 minutes, mash it and strain it using a sieve and discard the solids.
#02 Add toor dal, turmeric powder and 1 ½ cup of water in a pressure cooker. It is advisable to add mixed vegetables in a small container and place it inside the pressure cooker to avoid over boil now close the cooker lid, keep it over medium flame for 3 to 4 whistles.
#03 Turn off the flame and let the pressure cooker comes down or cool down. Open the lid, remove the container of vegetables and mash the dal using spatula.
#04 Heat oil in a pan over medium flame, Add mustard seeds and wait until it splitter, add curry leaves, dry red chillies, asafetida and sauté well for 15-16 seconds.
#05 Add chopped onion and sauté until onion turns brown and smooth.
#06 Add tamarind juice and cook for 2-3 minutes.
#07 Add tomatoes and sauté until it gets soft. And now add smabar powder. Stir and cook for a minute.
#08 Add cooked dal, boiled vegetables, water (as per requirement) and salt to taste.
#09 Mix well and boil for 7-8 minutes, until you see froth.
#10 Turn off the flame. Transfer it into a serving bowl and garnish with coriander leaves.
